Black Eyed Peas

  • 1 pound of beans
  • water

Procedure:

Quick soak. Rinse and sort beans in large pot. For 1 pound of beans add 6-9 cups of hot water.
Bring to a rapid boil for about 2-3 minutes.
Remove from heat.
Cover and let stand for one hour.
Drain off this soak water and rinse beans.
Add 6 cups of hot water to the beans.
Simmer gently with lid tilted until the desired tenderness is reached.
It will take about 1 1/2 to 2 hours.

Black eyed peas are often served with hot sauce.
