A quick, tasty snack from Crete for unexpected guests (and not only! )
This is the kind of dish that can be made with materials that never miss from a Cretan cupboard/fridge. It’s very popular both with parents for their hungry children, as it’s a healthy meal and with hosts for their unexpected guests! It’s also called “koukouvaya” (owl) because of its shape.

U.S. to Metric and Metric to U.S.
barley or rye rusks
fresh peeled tomatoes
1 clove of garlic cut up in very small pieces
Grate the tomatoes and break up the feta cheese in small lumps.
Wet one large rusk or two smaller ones for each person (don’t let them absorb too much water, though) and place on a large plate
Sprinkle the rusks generously with olive oil
Top up with grated tomato, feta cheese and garlic pieces
Decorate with Kalamata olives
Add pepper and oregano to your taste.
