Jollof Rice

  • ·2 cups rice
    ·2 cups water
    ·1 cup oil
    ·1 sliced onion
    ·1 chopped Green pepper(remove seeds)
    ·3 tbsp. tomato paste
    ·3 large fresh tomatoes
    ·½ piece ginger
    ·½ clove garlic
    ·½ tbsp. salt
    ·¼ tsp. curry powder
    ·¼ tsp. nutmeg
    ·1 Maggie cube(seasoned salt)
    ·1 tbsp. Paprika


  1. Blend the onion with garlic ,and ginger and the tomatoes on the side
  2. Add oil in non-heat resistant pot and heat oil
  3. Saute the onion, garlic, green pepper, ginger for 3 mins.
  4. add paprika
  5. Add tomato paste and blended tomato

  1. Add rest of spices
  2. Let cook for 30 mins at mid high temp until 90% cook
  3. Add Maggie to stew
  4. Add 2 cups water
  5. Let water bubble then add rice
  6. Add salt to water
  7. Cover the pot with the lid
  8. Cook until rice is finished cooking if you want it soft add ½ cup of water
Serve with chicken and salad is optional
