Zucchini Bread - makes 2 loaves

Conversion Table U.S. to Metric and Metric to U.S.

Ingredients:

  • zucchinibread.jpg3 eggs
  • 1 cup of vegetable oil
  • 2 cups of sugar
  • 2 tablespoons of vanilla
  • 2 cups of shredded zucchini
  • 1 small can of crushed pineapples (drained)
  • 3 cups of flower
  • 2 tablespoons of baking soda
  • 1 1/2 tablespoons of cinnamon
  • 1 tablespoon of salt
  • 3/4 tablespoons of nutmeg
  • 1/4 tablespoons baking powder

Procedure:

Beat the eggs, vegetable oil, sugar, and vanilla together until thick.


Stir in the remaining ingredients. Mix well.


Pour into 2 greased, 9x5 loaf pans.


Bake at 350 degrees for 1 hour
